Anjeer (fig) Halwa is a staple in Hyderabadi weddings, and the inspiration for the next of our #diwalidesserts with #chaithisathome series. Check out this stunning and versatile Cardamom Pannacotta with Fig Compote for #diwalidesserts2019.
Ingredients for Pannacotta:
1 tablespoon gelatin (#vegetarian brands exist)
2 cups @organicvalley #grassfed heavy cream
1 cup @organicvalley #organic half+half
⅓ cup sugar
Seeds from 3 green cardamom pods, crushed
Method for Pannacotta:
Sprinkle gelatin over 2 tablespoons cold water and let stand for 1 minute.
Heat the gelatin mixture on low heat until completely dissolved; set aside.
In a large pan, bring the remaining ingredients to just a boil over medium high heat while constantly stirring.
Remove from heat and fold in the gelatin mixture.
Divide into equal parts in small containers, cover, and chill overnight. I used my favorite @ballcanning 4-ounce jars from @mykingsoopers. These #masonjars come with airtight lids that help keep the #dessert fresh for longer, which is perfect for a make-ahead #recipe like this one. Since these are also adorable to serve in, I was able to avoid the extra step of plating!
Ingredients for Fig Compote:
🥥1 pound fresh figs (thank you @sprouts -- literally couldn't find them anywhere else even though they are in season!)
🥥½ cup @bigtreefarmsbali #coconut #sugar (at #sprouts)
Method for Fig Compote:
🥥Chop off the stalks on the figs, and dice them.
🥥Heat a wide pan on medium high, and add both ingredients with ½ cup water.
🥥Cover and cook for 20 minutes, stirring occasionally. Use a masher if necessary to break down the fruit further if you'd like.
🥥Remove from heat and chill in the fridge overnight.
Cardamom Pannacotta with Fig Compote:
When ready to serve, top each jar with a generous scoop of #compote and chopped pistachios or almonds.
I only used refined sugar in the #pannacotta to ensure contrast against the #fruit, but you can sub with healthier options. You can also easily switch up flavors with a different fruit compote (love versatile #recipes!).
